| Within the winery, all
tasks are done in such a way as to retain the highest quality in the
wines, and to optimize the processes. Wine tanks are emptied using
an endless screw, the pneumatic press runs on rails and so is easily
moved from tank to tank. Pressing is kept to a minimum because the
pressed wine is assembled with the wine extracted directly from the
tanks, for all of the domain's wines. |

| The wine's
tartaric precipitation takes place naturally, with the winter's chill,
so as to respect the traditional wine-making methods. |

Bouche continue to use traditional methods also for the fermentation
process, respecting the natural temperatures, without any additional
yeast. The grapes are preserved via careful pumping-up of the fermenting
juice..
Finally, meticulous care is taken with the selective blending of the
varieties, so as to produce richly structured wines with a great capacity
for aging. |
