winery is now equipped with several series of different wine tanks.
Its history began as early as 1978, when Jean Claude Bouche, oenologist,
with skills that he inherited from several generations of wine-makers,
took over the Domaine du Vieux Chene |

| The first portion of the
winery was set up that same year in the old stone building, which
was high enough to house stainless steel fermentation tanks. |
| In 1987, a
first extension was added to accommodate a new series of tanks in
a temperature-controled building that could be used to optimize the
final fermentation and conservation of the wines. This installation,
completed with conveyer belt for harvest,
pneumatic press on rails, and bottling
chain, is a very functional complex that makes it possible to await
and respect the final ripening of the grapes, to complete the harvest
field by field, to leave time for each wine to reach its optimum,
depending on the year. |
